Kabsah Rice ~ Nasi Arab





To cook this Arab rice dish  :-
Ingredients :
3tbs butter/ghee  + 2 tbs cooking oil
1  cup diced yellow onions
1  cup diced tomatoes
1 tbs  grated ginger
1 cup grated carrot
½ chicken (about 1.5kg)/ (cut into 2 pcs)
¼ cup tomato puree/tomato paste
3 or 4 cloves (bunga cengkih)
½ inc cinnamon stick (kayu manis)
4  or 5 green cardamons pods (buah pelaga)
4 or 5 black peppercorns
1 tbs mixed spices and a pinch of salt to taste
2 cups of basmati rice (washed once & drained)
3 cups of hot water
1 cube chicken stock

1.  Saute (tumis)  1 cup diced onions (yellow onions)  with 3tbs
     butter/ghee +  2tbs oil , the add in 1 cup diced fresh red tomatoes, 
     grated ginger, carrots  stir about 5 mins  then


2.  Add the chicken pieces and tomato puree , stir until chicken pieces
     well coated with all ingredients


3. Throw in  cloves , cinnamon , cardamons , peppercorns  and
    the mixed spices  with pinch of salt to taste

4.  Mix well and cook for about 15 mins then dish out the chicken pieces
     * (put aside first to be added in later)

5. Add the rice, hot water and chicken stock

6. Cover the pot and cook over slow fire. Half-way thru cooking ,
    put in the chicken pieces on top of the rice and leave to cook for about
    another 15 to 20 mins.

7.  Dish out to serve with  cucumber salad and diced tomato + green chili

* Optional/add in these items if available

   raisins/sliced toasted almond (ditambah sbgai hiasaan hidangan)

   Kabsa Spice Mix (campuran rempah Arab/ rempah nasi beriani)

   ¼  teaspoon white pepper
   ½ teaspoon ground dried limes                     
   ½  teaspoon saffron   
    1 pc bayleaf

Banana Bread ~ recipe from Joyofbaking.com

sieved together  flour, baking powder and baking soda
with salt & cinnamon powder in a dry bowl

melt and cool down 1/2 cup unsalted butter

mashed roughly 2 or 3 bananas
and  add the brown sugar into the flour mixture

lightly whip 2 or 3 eggs

mix together all wet ingredients

fold in wet ingredients into the flour mixture

baked in  8 x 8 cake tin
* since I dont have a loaf pan


baked at 180*C for 45 min
or until a skewer comes out clean/dry


Banana Bread :

A.
1 3/4  cups  all-purpose flour
3/4    cup  sugar  ( I prefer using brown sugar)
1     tsp baking powder
1/4   tsp baking soda
1/4   tsp salt 
1  tsp ground cinnamon (optional)
1 cup walnuts coarsely chopped (optional)

B
2 large eggs ( I used 3 med-size eggs)
1/2 cup unsalted butter, melted and cooled
3 ripe bananas , mashed - about  1 1/2 cup
1 tsp vanilla


method :

1. (A)combine the flour, sugar, baking powder, baking soda, salt, 
    cinnamon and walnuts

2. (B) in another bowl , combine all ingredients (B)

3. Then add in wet ingredients (banana mixture) into the
     dry ingredients (flour mixture), fold in gently until
      batter well mixed

4. Bake at 180*C for about 45mins or until bread is 
    golden brown and a toothpick comes out clean

My Favourite Bread Pudding

My family love this bread pudding
and I tried out a simple English Bread pudding recipe
and using whatever available kitchen ~
served cut pieces in muffins cups


 How to make a simple bread pudding :-

Start off by cutting small pieces whatever bread available just enough to fit an 8 X 8 baking pan. I use leftover French Loaf, which gives a nicer finish after baking the pudding.

Then beat 1 cup of butter with 1/2   cup of sugar (* add a bit more for sweetness to your taste) .

Whip in 3( or 4 )eggs, one at a time and mix well.

Pour in 2 cups of milk/fresh milk with 2 tbs wheat flour (or custard flour)  . Add 2 tsp vanilla essence and beat mixture and all well blend in. Mix in a cup of raisins. Just before placing pan in the oven, sprinkle some coarse sugar evenly on top or some cinnamon powder.

Pour mixture slowly into the bread pieces and let it soak for about 15 mins.

Meanwhile , heat up the oven at 180*C.

Then bake for about 40 mins and until cooked. 

Ready to serve.

Easy Bake Chicken Pie

chicken pie filling
you need :-

2 cups small pieces/diced chicken breasts
1/4 cup vegetable oil/butter
1  cup diced onion
2 cups cubed potatoes
* any vegetable of your choice : 
   green peas, carrots, celery (cut same size)
   or      
2 cups frozen mixed vegetables
1 can cream of chicken soup
salt and pepper

* about 1 cup  milk and 2 tbsflour for thickening
*  basil / Italian seasoning

  •  Heat oil/butter and add in onions
  •  Stir in chicken pieces until cooked
  •  Add in potatoes and all vegetables, stirring until all softened
  •  Pour in cream soup and stir in milk slowly while adding flour to thicken  mixture
  • Cook over slow fire for about 10 mins



  • Heat up oven 180*C , while rolling out/ cutting up and filling the pastry
  • Using a fork pick a  few hole ( to let out steam while baking)
  • Egg wash to finish 
  • Bake for about 35 mins/ or until golden brown

Kuih Apam Gula Melaka ~ dari Resipi.com & tested oleh Bibik Midah

~ adunan baru








Teringat dahulu, arwah emak buat kuih-kuih Melayu seperti apam, kuih talam, seri muka, kaswui  dan berbagai jenis lagi untuk jualan setiap hari. Memang suka makan kuih-kuih Melayu, tetapi anak-anak sekarang ini anak-anak kita tak berapa suka jenih kuih lama orang Melayu. Waktu itu tak minat langsung untuk mencuba buat sendiri. Ada seorang kak ipar yang rajin masak kuih-kuih jenis ini seakan serupa dengan kuih buatan bonda.


Sekarang ini kalau teringin nak makan dan beli dipasar-pasar malam/pasar tani, sememanglah tak puas hati.


Mencuba buat mengikut resipi yang diberi oleh adik (ruj: Resipi.com) -


Apam Gula Melaka 

* 1 cwn air
* 1/2 cwn gula melaka yg telah diracik halus
* sehelai daun pandan
2 cwn tepung
1 sk dry yeast
3/4 cwn air
3 sb gula pasir ( boleh kurang atau tambah ikut suka manis)
secubit garam

Cara-cara
Masak bahan bertanda* hingga gula melaka larut dan dibiarkan sejuk.
Campurkan semua bahan dan air gula yg telah sejuk dan gaul rata.
Seeloknya campuran tadi di masukkan didalam bekas besar.
Tutup dan bibiarkan selama 40min/1jam
 atau sehingga adunan naik hingga 3x ganda.
Tuangkan adunan kedalam loyang yg telah dilengserkan minyak.
Biar sekejap dlm 5 min.
Kukus adunan selama 30-35 min atau 
bila dicucukkan lidi, lidi keluar bersih.
Sedap dimakan dgn kelapa parut yg digaul dgn sedikit garam.

nota : adunan ni sesuai untuk loyang kukus saiz 21cm
